Change default image display in gallery block

Does anyone know a way to change the default image display order in a gallery block?  Currently it puts the newest uploads at the end/bottom of a page and I have to drag them to move to them to the top. I'd like for new uploads to automatically go to the top/front of the page, so my pages are always refreshing without me having to manually do it (but still want to be able to manually drag images if I want to move them). I'm using the Encore template. Thanks!
