Selling Catch Weight Items -Help

wondering if anyone has set up an ecommerce store with catch weight items and how to go about this? I am selling locally sourced and specialty foods and many will need a catch weight entered at time of sale, how do you go about setting this up? I can see a long solution being entering all the weights of the product as a variant but that doesnt seem to be very efficient.
