How can i sell a package where the client has to choose diferent options?

My website sells workshops and clases. We are having an event, where you buy a package, and then you choose between the diferent clases and workshops. There are limited places depending on the workshop. Im trying to make a landing page where clients can buy the package and then register on the clases of their choice. But im not sure how to make it work. i thought of making diferent variants, but there are so many diferent clases and schedules that makes the options infinite, plus that way i cant controll if that particular class or workshop has been fully booked.i aprecciate any help or ideas of how i could make this work!
