Replacing Collection name with Category name in product breadcrumb

Hi all,

I'm working on a site for a client. They have a large amount of antiques, however they'd like a homepage that shows a mix of products from all categories. For this reason I'm forced to only use one Product Collection.

An issue arrises when I'm creating the product summaries for each category. I'd like the Breadcrumb at the top of each Product Page to show the Category name instead of the Product Collection name. This way it will help distinguish each individual Category.

Any help would be much appreciated. I have developer mode turned on, but very limited experience with the FTP side of things.
