I actually figured all of this out with some poking around! All of these styles and colors can be found in the Font menu or the Colors menu...you just have to make sure you choose "SHOW ALl" and then scroll down, down through every section and guess at what style is being applied/used for the element you want to change. No CSS was necessary to make all four above changes!
