How to make products collections per type

Site URL: https://www.hyperion-astronomy.com/ evening all and I hope everyone is doing well and healthy I migrated from Shopify where you can create a product collection where you can separate products by type, manufacturer etc. This also helps with writing proper descriptions for these collection which in turn provides a huge value for SEO. Any ideas would be greatly appreciate.
