Delete the tag from your fig posts options (if it is still there), and add it again, maybe as figs. The limit to tags is huge and shouldn't affect your site like this, there is some other glitch affecting the tag filter search.

You've neatly summarised the solution in your question 🙂
Tag the products according to the charity information you want to display. Create the charity information content in a section on a standard page. Ask a developer to write some code that pulls in the required content when a Product Detail Page contains one of the charity tags.

If your business is entirely based in South Africa, you cannot use Squarespace for online sales yet. 
Stripe and PayPal are the only payment processors that you can use with Squarespace Commerce, and neither support South Africa. PayPal doesn't support South African Rand (ZAR) and, although Stripe support Rand, they do not support businesses that are entirely based in South Africa.
It isn't possible to integrate other payment processors, which means that you cannot use PayFast's API for example. You could add third party "payment buttons" but the third party platform will need to handle the entire order process in addition to the payment. If you have very few products, you might consider doing it manually.
Edit each product additional info > Insert 1 Code Block with left/right arrow link to 2 products. Then we can give the code to move the arrows to left/right of screen
