Just wanted to report back that my event is on Google:
think it was a matter of time
steps were to 1.) generate structured data with Schema Markup Generator; (https://technicalseo.com/tools/schema-markup-generator/) basically plug in event info; 2.) copy paste generated code onto page i.e. click gear icon next to page:
click "Advanced":
copy and paste code in box labeled "page header code injected"
3.) Make sure Google crawls page; you can request indexing on Google Search Console
a.) go to GSC and click on pages (highlighted)
b.) click "view data about indexed pages"
c.) "inspect url"
d.) request indexing

Ok, after some searching... I effectively want a table, but didn't realise it is already a hot topic! e.g. no built-in solution for table in SquareSpace. More here
But my design is very simple, so I did a simple code work-around
// left align all text blocks on mobile view @media screen and (max-width:640px) { section[data-section-id="652020b622bd57024793ce92"] .sqs-html-content p{ text-align: left !important; } }
I can keep the editing native and works on mobile too, problem solved!
